His steak order is a little wishy-washy, but definitely something that can be improved with good coaching and experience.
Maybe he only eats waygu then medium is a fine choice.
Medium is fine for a ribeye too, depending on how you're cooking it. You want that fat to render.
I have an immersion circulator for sous vide now so it's moot. I just circulate at 125 for a couple hours, then sear/rest to ~130. But if I'm doing it solely on a grill/flattop/pan then a bit higher is good imo.
