I was on ESPN and they mentioned we offered him a scholarship (2015 recruit) at OT, he'll be with Settle and Tolliver for the Western Michigan game...broke his ankle during his junior year so 247 doesn't have him rated. 6'8" 300 lbs.

Luther Maddy's other offers were from Florida Atlantic, Florida International, Hampton, Northern Illinois, UNLV, Western Michigan, etc.
Dadi Nichols' other power five offers were Minnesota and Kansas.
Both of those guys worked out ok.

Just did a quick look. Couldn't find any video on him and only one video of his team in 2012 (and that was really just film at field level for Atlantic-Delray Beach's highlight vs his HS...ring a bell? Wonder if there's a connection there somehow?).
So that might help explain the lack of offers?
