Serious corn note....if you have never had fresh corn from an Iowa field, you don't know what you're missing. My mother-in-law used to say they would have the water boiling before going to the field to pick corn, and would run from the field to the pot. I miss going out there in the summer.
My wife is from suburban Des Moines, so she's not a farm girl.....but her Mom was. And she definitely knew what she was talking about regarding corn.
I can't speak to the wonderfulness of Iowa corn, but fresh from the stalk is something special.
Story time: My church growing up would host an event in the late summer called the Corn and Watermelon Feast. That morning, the elders and deacons would go out to one of the local farms and pick sweetcorn straight from the field. They would bring it back to the church and enlist a bunch of the kids to help shuck it.
Meanwhile, we worked out a deal with the nearby Be-Lo to buy a bunch of watermelons every year at a really good price. They would put them in their walk-in freezer for most of the day so when we picked them up they were freezing cold.
The congregation shows up at like 530 with lawn chairs and towels and has sweet corn fresh out of the boiling pot and near-frozen watermelon to go with it. Half a dozen tables are set around with plates of butter and plenty of salt and pepper. Its a little warm in the summer evening, but the frozen watermelon really offsets the early evening heat and everyone spends the evening talking, laughing and eating too much.
Things must have changed since the 50s. Dad got his doctorate at Iowa State. My mom used to tell me that when they moved out from Pennsylvania, she was looking forward to the produce out there. But the corn was terrible as it was all feed corn. The good sweet corn from NJ/PA was much better than what you could get in IA. Guessing the mix of what people grow now is very different from back then.
There were places that you could get field corn, but my mother-in-law never would frequent them. She would seek out the random farmer stand on the side of the road, and there were always a list of questions about when the corn was picked, what kind it was, etc. The corn had to pass the smell test. Pull down the shuck and smell it. If they didn't let her do that, back in the car we'd go.

He a fellow Virginian who married an Iowa girl ask her if she ever had Manhattan Deli in Des Moines? Ask what her favorite Taco John's order is? How often do people around her confuse Iowa, Ohio and Idaho?

Haven't heard her mention Manhattan Deli, and I haven't been there when we were out there. She may be aware of it. Don't know how big a fan she is of Taco Johns, but I've heard her talk about going there. She bought one of my sons a t-shirt with the outline of the state of Iowa, with "Not Ohio" inside, so the sentiment is known. My worst mistake was not long after meeting her, and far in advance of actually visiting Iowa, was asking her if the state tree was a telephone pole. She was not amused.

We have amazing sweet white corn here in NJ- I literallly live next to farm and can walk out my back door, pick corn, and have it in the pot in 15 minutes. I also make a horseradish mustard butter, which once you have it, you will never use plain butter again. It's like crack.
Wait! horseradish mustard butter?
My god, it sounds perfect for a great smash burger.
How do you make it?
2 Sticks salted butter, room temp.
3 rounded tablespoons prepared horseradish
3 rounded tablespoons good stone ground dijon mustard
1 teaspoon salt
1 teaspoon ground black pepper
1 tablespoon fresh minced parsley or dried parsley
Mash together with a fork till blended. This will last me a month or so eating 2 ears every few days during the summer.
You can adjust all of these to your own taste, of course.
Once again, full disclosure and fair warning: once you do this you may never be able to enjoy corn with just plain butter again.
