The thing is the last trilogy didn't need to be made. There was no point to it but to make money off of no major Star Wars movie released in over a decade. It was a poorly done copy-paste with some changes.
Now that they're playing with the extended universe and straying away from the Skywalkers they can make fresh and interesting things.

This is a succinct and accurate description of episodes 7-9. Thank you for summing up my feelings about those three "films" in three simple sentences. Such a bad storyline. Shame on Disney for that trashing of my favorite childhood movie trilogy. At least Mandolorian has been redemptive and imaginative.

Different ppl driving different busses. Decisions on the movies were made by people that do not seem to understand what makes the films special to fans. Lots of shots back and forth on that by lots of people including Mark H., studio execs, etc.
Filoni really had to crawl up a mountain through the tv animation side, which was managed independently, to get to where it is now. Once Disney Plus was happening Favreau and some key execs pushed for live action TV with the Filoni vision. It's success caused more cat fighting among execs but is undeniable, and the one thing the Mouse knows best is how to follow the money, so TV is expanding while Films are being re-assessed.

If not for Filoni's content and his ability for story telling star wars would be in an interesting point in time but luckily he gets it. I can appreciate the newest trilogy in some ways but would agree it fell a bit flat but I can still enjoy them if I watch them.
I look forward to what Filoni sees and where hes taking it all and hope we get more of the expanded universe as there are so many good stories to see. I would've loved more Maul content in live action but the animated shows did a good job on painting his story. They couldve made a movie off the siege of mandalore alone.

It did look pretty cool, but for the Expanded Universe enthusiasts out there, you might see this version of Boba Fett has more than a passing resemblance to Talon Karrde. Odd, as both both characters are plenty iconic enough to stand on their own, and play off of each other for some epic storytelling. We'll see.

I don't know if anyone has played KOTOR or KOTOR II, but the KOTOR II story line has flaws, but the mood of the game is extremely unsettling and achieves a moral complexity almost on the level of Blade Runner.
My point is this: it is possible to use the Star Wars IP to make entertainment that isn't copy/pasta of the original trilogy.

I actually think the Mandalorian did a pretty good job of this. I know it brought back some other characters for season 2, but it generally told a new, different story.
I'm pretty excited for the upcoming Acolyte show as it will be the first Star Wars media since Disney bought it not set in the Skywalker timeline.

I just disregard them as non-canon, and resent The Mouse because they were released.
