OT: Thanksgiving Leftover Ideas

My favorite Black Friday breakfast is stuffing waffles topped with a fried egg. Take stuffing (preferably sausage stuffing) and throw it into a greased waffle iron and waffle until it's nice and crispy on the outside. Then top it with a fried egg and some optional maple syrup.

My dad use to make this wicked 7 bean soup with the leftover turkey and added in sausage, if you had not burst from the day before you definitely did after that

To me, life's greatest mystery is why people only want meat and bread (sometimes cheese) on their sandwiches. How can you not want lettuce, tomato, onions, cheese, etc.? My sandwiches require a tall mouth and I dislike a sandwich with only meat and cheese.

Note: condiments and seasonings excluded

couldn't agree more, I'm all for the ruffage. Subway hates when I walk through the door. They can't fold my sandwiches when I am done adding everything I want.

Leftover rolls or bread with turkey, cranberry, and either a thin layer of mashed potatoes or stuffing.

Or, I just throw everything in a massive bowl and mix it all together. Turkey, mashed potatoes, stuffing, gravy, and a touch of cranberry sauce.

Turkey soup using the turkey carcass is also always tasty.

Roll with turkey, cranberry sauce, Dijon, and Brie. Toast that bitch and nom.

Green chile turkey enchiladas! Momma dukes is from New Mexico so Hatch green chiles are a staple in our house. And not those damn rolled enchiladas you see at restaurants, these are corn tortillas layered like a casserole/lasagna in true New Mexico fashion.

Rellenos... One of my favorites. Probably #2 behind a good pork chile verde stew.

When I lived in Phoenix there was a local chain that strictly used Hatch Chiles. Hot as hell, god forbid they ever run out of beer.

Gracias, amigo! My all time favorites are from the Los Ojos bar in Jemez Springs, N. Mexico. I could eat them two or three nights a week, and still wish I had them the other nights, too.

OT and perhaps for another thread, but Id love to pick your brain sometime about your experience fishing in the Jemez (I'm assuming you did). Went once this summer (first time fly fishing), had no idea what I was doing and didnt have much luck, but I'd like start going on a more regular basis.

Left over sliced Mac-n-cheese grilled in a frying pan and topped with Cholula.
Turkey and peas and carrots, sauted in butter and cream, and poured over re-heated dressing.
Sliced turkey and swiss croissant with Dijon and lettuce.
Turkey Tom Yum.
Mashed potato pancakes topped with pimento cheese, a soft fried egg, and a splash of gravy.

Sometimes we live no particular way but our own

UVa pancakes, finished with a VT victory, served on Saturday.

Call me a traditionalist, but I like it the same way every year.

My mom has a great turkey gravy recipe for breakfast.

1) Make a pepper gravy, the same base as your standard sausage gravy.
2) Rip up some leftover turkey and put into gravy.
3) Make biscuits
4) Pour Step 2 over Step 3
5) Enjoy

We do prime rib for Thanksgiving. Left over prime rib is chopped up with chorizo and ground beef in chili for the weekend. Its great on the cold days for the rest of the weekend while watching lots of football! Just reheat and eat!

What are Thanksgiving Leftovers?

I love a good nap. Sometimes that's all that's getting me out of bed in the morning.

Tradition here is to make a turkey and sausage gumbo, but the chile verde idea above could definitely happen. i always use pork but i can see how leftover turkey could work

I think about my Thanksgiving leftovers in 2 categories:
Sandwiches

  • Cold Turkey Sandwich - Toasted Kaiser roll, mayo, cranberry relish, tomato, lacy swiss cheese, turkey, and stuffing. Each 1/2 of the roll gets a mayo, relish, tomato, cheese, turkey layer with the dollop of dressing in the center. Add crisp iceberg or romaine lettuce if you want some crunch.
  • Hot Turkey Sandwich - Thin slices of toasted Ciabatta, Turkey, Mashed Potatoes, Dressing, Gravy. I make this one open faced. Coat the bread with a dollop of gravy before adding turkey, mashed potatoes, dressing, and more gravy.

Meals:

  • Redo Dinner - Simple, make plates of leftovers and warm things up.
  • Turkey Hash - This is a new one for me this year, thought I might give it a try. Turkey, Dressing, Green Bean Casserole, mixed in with a diced/chunked potato hash brown. Serve with a couple of poached eggs on top. cover with gravy
  • Turkey Soup - We will see if I have the energy for this. Pick the carcass clean, Brown ~ 1/2 cup of onion, celery, carrots, and turkey carcass in 1/2 stick of butter in the bottom of your stock pot. Water, vegetable stock, (some white wine if you have some handy) simmer for a long time, skimming fat etc. In a second pot brown onions, carrots, celery, build a good fond on the bottom. Remove cooked vegetables, add diced turkey and seasoning (salt, pepper, thyme, parsley), continue to build fond. Brown turkey bits. Deglaze bottom of soup pot with a couple of cups of the stock. Add stock to fill your soup pot, add a bay leaf or two. Simmer for another ~ 2 hours. You can add some small pasta/noodle to this if you want a 'noodle' soup

Turkey pot pie with the top crust being a layer of stuffing and mashed potatoes on top rather than inside.

I smoke a turkey and did a test run of this year's recipe on Sunday. Used some of the white and dark meat to make a smoked turkey pot pie Monday night for my boss. Took the carcass and made a stock and froze the smoked jus that caught the bird's drippings.

Pro Tip: Make risotto using the homemade stock. Really kicks it up a notch.

Poultry stock is great for rice too. My wife makes basmati rice with chicken stock instead of water.

Two things we do:
1. Turkey pot pie. Not sure how she does it, but she makes it with leftover turkey, puff pastry, pearl onions, peas, and other great things.
2. The thanksgiving sandwich: Bread topped with turkey, stuffing, gravy, mashed potatoes, green bean casserole, and cranberry sauce.

Love the stuffing waffle idea, would add a couple of oysters, forego the syrup, and top with giblet gravy.

Sometimes when you're rushing out the door for those sales, you have to opt for a leftover smoothie. No time to sit and eat, drink and go!

Roll out a crescent roll, spread softened cream cheese on it, add cranberry sauce and turkey. Roll it up and bake.

I like to saute our leftover roast beef (or turkey, ham, whatever) and veggies, and add it into an omelet.

My wife just made leftover turkey and brie egg rolls with gravy or cranberry sauce for dipping. I'm a spoiled man.

WE had some lobster left over. I chunked it up and warmed it in butter / garlic / touch of ground hot pepper. Served it over linguine . Pretty good!

Even when you get skunked; fishing never lets you down. 🎣
