2020 has been such a wonky year for so many reasons, and just want to express my thanks for this community that somehow manages to make me old but simulataneously keep me young.

Kinda strange being alone with just my wife and kids on Thanksgiving. First time for everything I guess.

I cannot wait to try my chocolate pecan bourbon pie.

Chocolate Pecan Bourbon Pie you say? I am VERY interested in this.

I have a recipe! I'll dig it out, edit it in here and also in the tkp recipe thread

It's probably similar to the recipe GGC is going to post, but here it is:

Pillsbury pie crust (ain't nobody got time to make from scratch and I don't give an eff what any of yall say)

2 cups pecans (about 7 ounces)
3 large eggs
0.75 cup dark brown sugar
0.67 cup light corn syrup
1 teaspoon pure vanilla extract
2 tablespoons unsalted butter (melted)
3 tablespoons bourbon
0.5 teaspoon salt
0.75 cup semisweet or bittersweet chocolate chips

Toast pecans in oven at 375Β° for about 8 minutes.

In large bowl, whisk together all ingredients except chocolate and pecans. Then fold in the chocolate and pecans. Pour mixture into pie shell. Bake on bottom rack (at 375Β°) for 50-55 minutes or until filling is set. Cool before serving.

FYI I added a bit more bourbon and pecans than the recipe calls for. I think I did 4 or 6 oz instead of 3 tablespoons, and 2.5 cups instead of 2. What can I say, I like bourbon. And pecans. It didn't affect the filling's ability to set properly.

I'll let you know what I think later today (never made this recipe before).

I used 1/2 c dark brown sugar + 1/3 c white sugar (instead of 1 c white sugar), and used half semisweet and half dark chocolate chips (instead of only semisweet).

Also you need to make sure the sugar mixture is added SLOWLY to the egg mixture or else there's enough heat to scramble the eggs

Absolutely a critical step if your recipe calls for heating any mixture that then gets mixed with raw eggs. Scrambled eggs in a pie filling is no Bueno (assuming a quiche is not the target result).

Just went outside to take out trash and recycling. Weather is waaaay too gorgeous for late November, so off to go cycling. Will stop by the old house to feed the fish as we are still in the process of moving. Tomorrow we get to try and move the 45 gallon tank and keep the fish happy while doing it. Wish me luck.

Fresh or salt?

Where's the beef?

Fresh. Heard from a coworker whose roommate has a big salt water tank that those are a bear to take care of. Said the guy spends half of his weekend on it.

Have 7 fish in there with a divider splitting the tank into 2 groups. Plan is to take out most of the water and all the decorations and transfer the fish over in containers. Have an old 10 gallon tank that we will put some into while we do a cleaning of the big tank when we set it up here. No idea how long it will all take. Any tips?

Bag the fish up. Drain the tank completely. You can go to Home Depot or Lowes and get 5 gallon buckets with lids. Fill 4 of those with water. A couple more with the gravel or sand. If you put the fish in containers go to Walmart, they usually have battery operated air pumps in the fishing department. Keep your filter media and get that setup and running in a bucket as soon as you get to the new house while you set the tank back up so the goodbacteria might survive. Once the tank is set back up, add extra aeration by either additional filters or air pumps. Plan to have to change water 50% several times in the first couple weeks. Especially do a water change if you see the fish up at the surface. Recommend getting Seachem Prime if you don't already use it to treat the water.

Also a good opportunity to rinse the gravel with some of the old tank water. Lots of gunk gets stuck in that even with regular vacuuming. The sand just under the surface in my saltwater tanks was so filthy and gross. I bombed a tank once just by lifting a rock up off the sand.

Thank you both. And I had just read that you should not feed them for at least 24 hours before the move, so I said let's feed them tonight and then wait to move then on Saturday. We are only going just over 3 miles, so my hope is that they are not too stressed. Will take out everything and keep a lot of the current tank water to set up the old 10 gallon one over here while getting the big tank cleaned and up and running. I think we probably should get some more containers before the move.

Edit: we do have bacteria, Quick Start and Stress Coat so hopefully that coupled with the very short move will help.

The only reason for using the old tank water to rinse the gravel is you don't want to kill off your beneficial bacteria with chlorinated water. You can refill the tank with new water as long as its been treated or its ro/di.

Weather was so nice this afternoon that I spatchcocked the bird and cooked it out on the grill. Only took around 80-90 minutes from start to finish.

Happy Thanksgiving ladies and gents. Hope y'all had some good grub and were able to enjoy your families (as much as possible in this crazy time)

Cooked my first dry brined turkey and likely will never cook a turkey any other way again. Salt, olive oil and various herbs and spices, little lemon juice and a dab of brown sugar. Brined it Sunday, in fridge covered for three days, one uncovered. I even overcooked it a little due to an overly long birthday call to my brother, and it still came out incredibly moist and tender, and that was just the breast meat. Wow, what I've been missing all these years. Much better than our wet brined efforts and so easy. I worried a bit that although is was a fresh "all natural" butterball, it was injected with 4% solution, but it wasn't too salty, and the juices in the pan weren't salty at all, for gravy makings. Stuffed and surrounded by rough cut celery, onion and apples, it was the best turkey I've ever cooked.

Reel men fish on Wednesdays

Didn't do anything this Thanksgiving, but still had a pleasant day sequestered at home alone. Went to the grocery store early this morning and picked up a leftover turkey, 22 lbs for $25. Going to stuff it with a whole loaf of bread with Betty Crocker's stuffing recipe and make myself a weeks worth of Thanksgiving food tomorrow while watching college ball. Ocean Spray Whole Berry Cranberry Sauce, green beans, corn, candied yams and either mashed potatoes or potato salad all on the docket to prepare tomorrow.

Good thing you have that treadmill because you're not going to be able to fit through the stable door after eating all of that.
