But seriously, we bittered with Magnum (recipe called for hop extract, but we couldn't get any in time), and then a mix of Columbus, Apollo, Amarillo, Centennial and Simcoe at 10 minutes, whirlpool, and dry hop. All in all, we put in over a pound of hops for a 5-gallon batch.

That saison sounds amazing! I'm totally loving the New Zealand hops. It may take a while to sour, especially at keg temp, but I think it is probably great as-is.
