Then I have 2 bourbons and a capnap (10-15 minutes tops). Take a leak, then scream my head off...hopefully by now I'm in the stadium for this last part).

But seriously, we bittered with Magnum (recipe called for hop extract, but we couldn't get any in time), and then a mix of Columbus, Apollo, Amarillo, Centennial and Simcoe at 10 minutes, whirlpool, and dry hop. All in all, we put in over a pound of hops for a 5-gallon batch.
That saison sounds amazing! I'm totally loving the New Zealand hops. It may take a while to sour, especially at keg temp, but I think it is probably great as-is.
