If I remember correctly Da'Shawn Hand eliminated us (and picked Alabama) for the education. It's hard to turn down people that are trying to give you so much, so I get the idea that you need to give an excuse. However, they could probably plan the excuses better ahead of time haha.
Doesn't matter. Nothing changes. We still have to prepare like there is no tomorrow, and we still need to run a trap on the first play with Mullet Man pulling and knocking the hades out of whoever is playing that defensive end position.
We were pretty rowdy. Penny locking doors, dust pans at the base of the door and peeing into one's room, running by and hitting people sitting by open doors with flour bombs, and more. There were a bunch more, but I feel like this was already enough...

I have a couple of 120s hanging in the cellar right now, I believe they are from 2012. I know a lot of people would be shocked keeping a IPA around like that, but they should age well.
I've got a bunch of Belgians too, love aging anything with Bretts (just bought a Regalia today) to see how they play down the road.
The brewery bubble continues to expand, so definitely see more opening and others getting bigger. Per my other comment, I'm working with two right now doing that same thing.

That's the truth. I worry most about Tech when we don't have that huge chip on our shoulder. I know that we won't take them lightly, but I don't want a single mote of sawdust to fall off of that chip until we entitle ourselves to call ourselves better than them again in September.

I think the new craft beer movement is heavy on the IPA side, however there are a lot of great beer styles out there. One of my favorite breweries right now is Right Proper in Shaw. They play around with a bunch of the styles and aren't scared to make a beer under 3% ABV. They have also done some great collaborations with brewers such as Megan Parisi that were definitely unique (like adding juniper branches and what not).

Yup that is the place. I'm still working on the Sorrell Design site. Been a bit busy. Met with a brewer today who is looking to open a place in this area (he has had some homebrew stuff go to nationals and his stuff is pretty solid) and will be meeting another brewery next week that is expanding.

Knock the hops variety down to 1 or 2. Too many different hops and you lose the citrusy thing. Try citra and 1 of the others.
Use a pre-blend yeast like you mentioned.
As for acidic taste in a short period of time. Consider mimicking the procedure for doing a berlinerweisse.

While I was attending VHCC we voted for the first mascot of the school. Hellbenders won by a landslide, but a couple stuck up faculty members shot it down after it won on the ballot. Complete bullshit. They lied to the students and told them Wolves won.
For those that don't know... Hellbenders are the largest salamanders in North America. They occur in rivers around SWVA.
