It seems to me like the list was a little too offense focused, there were some really good Defensive plays/series that were left out. For example, Cody Grimm's 3 forced fumbles, 2 in the first 3 defensive snaps, along with 8 tackles and 2 sacks against NC State in 2009:

THIS is absolutely the first performance that came to mind. There have been a lot of amazing performances in the Beamerball era, but this one stands out. I've never seen a defensive lineman take over a game like that.
